Jessica Canning, Owner/Head of Operations

Foraging a highly successful career as a brand manager and marketing specialist for 8 years, Jessica Canning will embark on the next iteration of her hospitality career as owner/head of operations for Scone City to open in Chicago’s Wicker Park Winter 2015.
Graduating from Hamilton College in Clinton, New York in 2002, Canning, originally from Barrington, Rhode Island, earned an MBA from Boston University. Since graduation in 2006,she has followed a traditional marketing path, working at several corporations throughout the east coast and Midwest. Following two years as an associate brand manager at Hasbro in Rhode Island, Canning moved to Chicago in 2009 for a marketing manager position at Storck USA and then a brand manager at Dyson for two years.
While living in Boston, Canning met her husband Tim Canning. In 2009, the two moved to Tim’s hometown of Chicago. Tim opened up a café and market, Lemon Tree Grocer in Downers Grove, Illinois in 2010. Canning soon became the grocery manager, buyer and, eventually, operations manager of the store.
With the desire to expand their business to downtown Chicago, Jessica and Tim Canning decided to start a new endeavor together: a bakeshop and espresso bar, specializing in an expansive sweet and savory scone menu. Utilizing her years of marketing and experience working on an operational level at Lemon Tree Grocer, Canning is well prepared to take on the challenges of opening and running Scone City.


Laurie McNamara, Pastry Chef

With the Scone City concept developed around her unique scone recipe, Chicago native Laurie McNamara has been making pastries for more than twenty years.
The most popular item at her current post and sister store, Lemon Tree Grocer, McNamara has created a myriad of sweet and savory light, yet buttery baked goods for her newest endeavor, Scone City, a Wicker Park bakeshop and espresso bar.
Chef McNamara’s fondest memory is baking cookies with her grandmother as a child. This
passion for baking sparked an interest that led her to Paris, France to study at Le Cordon Bleu, where she earned a pastry degree with honors. Upon returning to the United States, McNamara studied at the Wilton School of Decorating and Confectionary Art, where she received a certificate in master cake decorating, advanced gum paste and rolled fondant.
Over the next twenty years, McNamara worked as a pastry chef at a series of bakeries and restaurants throughout the Chicagoland area. Most recently, McNamara has worked for more than two years as head of pastry at Lemon Tree Grocer in Downers Grove, Illinois, where she heads up the pastry program for the store and catering events. It was during her time working at the local boutique café and market, that she met head chef and owner Tim
Canning and his wife, Jessica Canning.
McNamara’s favorite afternoon treat is, of course, a scone and cup of tea; she is excited to share her special scones with the Wicker Park community.
